Joel grilled up some BBQ chicken breast that I incorporated into several meals throughout the week. I highly recommend this. It really cuts down on the time and effort required to get dinner on the table during the week!

Monday

Tuesday
Chicken Tikka Marsala (I skipped the entire chicken process and just used the BBQ chicken breasts. I added ginger to the sauce and used half and half and a bit of milk in place of heavy cream. I doubled the sauce and served the dish over brown rice.) Recipe was very good and easy.
Zucchini and Yellow Squash
Wednesday
Pork Chop Skillet (I used chili ready tomatoes, which gave a Tex-Mex flavor to the dish.) Meal was delicious, but the serving size was very small. I think the recipe should have been doubled to serve 4. Very easy one-skillet dish.
Thursday
Quesadillas (We had a make your own quesadilla bar set-up with tortillas, cheese, grilled peppers, onions, and BBQ chicken. Toppings: salsa, sour cream, guacamole.) Yummy meal, but very fattening, so it won't be part of our regular rotation.
Friday
Chicken Sausages
Vegetarian Stuffed Peppers (Instead of 2 kinds of beans, I just used 1 can of black beans. Instead of cheese throughout, I used shredded taco cheese on top after I took Graham's pepper out of the crock pot. I left out the olives.) Recipe was yummy and easy. We used it as a side dish with the sausages.
Saturday
Summer Corn Chowder (I used peppers under the line item where a choice is given. I used rice milk instead of regular due to Graham's allergies.) Recipe was decent though it was more of a soup than a chowder. We had a big lunch, so we ate the soup alone, but I would've served it with bread or a salad, or both.

Love this. :) I must confess; I stole your idea of having hubby bbq up some chicken to use in future recipes! I love that idea and don't know why I didn't think of it before. But, it sure cuts down on the time to cook them up for each meal. And we eat alot of chicken in our family!
