Here's what we ate last week! :)
Sunday Joel grilled up a bunch of BBQ Chicken Breast that I incorporated into a few meals. This is such a timesaver and works out great.
Sunday
BBQ Chicken Breast
Cucumber Salad- equal parts cucumber, tomato, red onion, greek dressing diluted with water
Baked Sweet Potatoes
Monday
BBQ Chicken Salad Wraps- 3 cups of bbq chicken, 1/2 a can of corn, a couple tbspns each of mayo, miracle whip, and bbq sauce, 1/4 cup red onion diced finely, 1/2 cup of chopped celery, spritz of lemon juice- mix everything and refrigerate overnight, serve in whole wheat wraps w/ lettuce and tomato.
Fruit Salad- 2 cups each of strawberries, blueberries, cherries, and red grapes, tossed with one tbspn of honey, spritz of lemon juice, and 1/2 tsp of poppy seeds.
Tuesday
Chicken Fajitas- 3 bbq chicken breasts cut into strips, 1 red onion, 1 green pepper, 1 red pepper- cut peppers and onion into strips, saute until softened, add chicken until warmed through, spritz with lemon juice. Serve in flour tortillas with your favorite toppings. Ours are guacamole, sour cream, cheese, and salsa.
Chips & Guacamole- 2 ripe avocados, 1 tomato, 1/4 finely chopped cup red onion, spritz of lemon juice, Ortega guacamole seasoning packet.
Wednesday

Breakfast Tacos- 4 eggs scrambled with 1/2 of a red pepper (soften pepper before adding eggs), 5 slices turkey bacon, pepperjack cheese, 1/2 can of black beans heated with 1/4 cup salsa, 5 taco size flour tortillas. Heat tortillas on burner, fill with layer of each: egg & pepper mixture, black bean mixture, chopped slice of turkey bacon, and pepperjack cheese.

Fresh Green Beans, pan sauteed
Lipton Stroganoff Pasta Side
Everything was really good! I am not sure I would repeat the dressing on the fruit salad. It wasn't necessary. It wasn't bad, but I don't think it added anything. Hope you get some inspiration! :)

Thanks for sharing again...I'm thinking we might be trying the breakfast tacos....those sound "different" (in a good way) and quite yummy -- something we haven't tried. Plus, Luke will eat eggs....so perhaps he'll do those :)
