Weekly Meal Plan... :P

A lot of the blogs I read post their weekly meal plan. I love reading these as it is nice to get new ideas, so I thought I’d join in. No promises on doing this weekly. Most of the blogs post ahead of time, I am doing the opposite. I am posting what we had last week. That way I can tell you if it was good. :)

Usually I think of what I want to make and then I find a recipe that best matches what I am thinking of, then I make modifications. Mostly the recipe helps me figure out serving sizes, or how long to cook stuff. Where I used a recipe as a guide, I will post it and my modifications.

On Saturday night, Joel grilled a bunch of pesto marinated chicken breast that I planned meals around.

Saturday
Pesto Chicken Breast
Roasted Red Skin Potatoes
Grilled Zucchini

Sunday- At Joel’s parents (grilled chicken, lots of veggies, and pie)

Monday
Chicken Pesto Pizza (Boboli crust, marinara, chicken, red pepper, red onion, mozzarella, feta chunks)
Spinach Salad (baby spinach, bacon, feta chunks, red onion, red pepper, ranch dressing)

Tuesday
Chicken Pasta Bake (recipe had the following changes: pesto chicken, added can of diced tomato, used 3 cups frozen broccoli, added sauteed baby spinach, added garlic, left out the cheddar chz)

Wednesday
Taco Bake (recipe had the following changes: used ground turkey, added can of corn and 8 oz salsa, used 14 ozs pasta, and extra taco seasoning)

Thursday
Chicken Burgers (from Costco)
Spinach Salad (baby spinach, bacon, feta chunks, red onion, red pepper, ranch dressing)

Friday
Chicken Wraps (baked chicken tenders, bacon, pepper jack chz, onion, lettuce, tortilla)
Sweet Potato Fries
Zucchini

Saturday
Pasta w/ Asparagus & Sausage (recipe had the following changes: used chicken andouille sausage, added 2 tbsp of pesto sauce)

Everything was delicious! I would recommend every meal and would not change a thing in the way they were each prepared. Have a great week!

That taco bake sound yummy and very easy to make. I might have to give it a try. Thanks for the idea.
